100 Garlic Clove Consommé or Soup Base
Ingredients
100 cloves garlic (roughly 2 cups of peeled cloves; you can buy them at many stores pre-peeled)
3 Tbsp extra virgin olive oil
½ tsp sea salt
6 cups bone broth or other good-quality broth
1 can coconut milk (not light)
2 Tbsp lemon juice
Additional sea salt to taste
Freshly ground black pepper to taste.
Method
First, roast your garlic: Preheat the oven to 350 F. On a baking tray, add garlic, olive oil, and half a teaspoon of sea salt. Stir, and place in the oven to roast until browned and caramelized, about 30-40 minutes. Check partway through to shuffle the cloves around for even roasting.
Once the garlic is roasted and cooled, place into a food processor with remainder of ingredients and blend to desired consistency. Add seasoning to taste.
Use this a flavourful base for chicken soup, vegetable soup, or even in place of water when cooking legumes or grain. Alternatively, this can be consumed as a light consommé to accompany a meal.
