Spring is coming! That gets me thinking about all of the fresh flavours and local food that will slowly become available. Here’s a light salad that I think you’ll love.

Despite how easy it is to make, you’ll be a big hit at your next dinner party or potluck for elevating everyone’s salad experience way beyond the norm. And if you want to turn it into a full meal, it’s easy! Just pick-up some chicken, high quality sausages or another protein of your choice and you’re good to go.

Ingredients

Baby arugula (about half of a small clam-shell plastic container, or roughly 70g)

1/2 to 1 thinly sliced naval orange

Shelled pistachios and/or slivered almonds (I like to use both!)

Feta cheese crumbled (I love a brand called ‘Bon Feta’ available at The Big Carrot)

Olive oil and lemon dressing – Use juice from about 1/2 a lemon and drizzle enough oil to lightly dress the salad. Adjust as needed. I love Acropolis olive oil (available at The Big Carrot)

Salt and pepper to taste
