Blueberry & Zucchini Smoothie
Ingredients
1 cup frozen blueberries
2 cups rice unsweetened milk
2 medium zucchini, remove ends, and peel 1/2″ outer skin (save this for a homemade zucchini lasagna or zucchini noodle pasta!)
2 romaine leaves
1 tbsp maple syrup
Method
Wash zucchini; chop off and discard ends. Using a vegetable peeler, remove the outer 1/2″ skin. Save these pieces for a homemade zucchini lasagna or zucchini noodle pasta – or keep it real simple and just drizzle with salt, pepper, olive oil, balsamic vinegar and eat it for lunch.
Remove 2 pieces from your bouquet of romaine leaves and rinse with water.
Place all ingredients in a high powered blender and mix until smooth.
Then pour, sip, and smile.
