Brazil Nut Milk
1 cup brazil nuts, soaked in about 2 cups water for 6-8 hours
4 cups filtered water
½ tsp vanilla extract
? tsp sea salt
5-10 drops stevia
Drain soaked brazil nuts and rinse with clean water.
Add nuts and 4 cups of filtered water to a high-powered blender and blend until creamy.
Using a nut milk bag or a few layers of cheesecloth draped over a colander, pour mixture into a large bowl, straining out brazil nut pulp. Make sure you squeeze the nut milk bag or cheesecloth until the pulp is relatively dry and all the “milk” has been extracted. Discard pulp or save for below recipe.
Stir in vanilla extract, salt, and stevia, and transfer to a large jar or jug. Will stay fresh in the fridge for about 4 days.
** Caution – It estimated that one Brazil Nut can contain up to 160% of your daily selenium needs. Selenium toxicity is a health concern if we over consume foods high in this mineral.
