Carrot Cake Oatmeal Bowl

Ever just need a cozy pick me up to get you through these chilly winter mornings? How about having all the flavour of a carrot cake in a healthy bowl of oatmeal? This recipe combines warming spices, creamy oat milk and hearty oats. Start your mornings off right!

Ingredients

3/4 cup Quick oats
1 1/4 cup Oat Milk, unsweetened
1/4 tsp Ginger, ground
1 tsp Cinnamon, ground
1/8 Clove, ground
1 1/2 tbsp Brown Sugar
1/4 tsp Vanilla extract
1/8 Salt
1/4 cups Golden raisins
2 tbsp Cranberries, dried
1/2 cup Carrots, shredded

Method

1. In a small pot over medium heat, add oats, oat milk, ginger, cinnamon, clove, brown sugar, vanilla extract and salt. Stir well to combine. Once the mixture reaches a heavy simmer, reduce to low heat.

2. Cook oats according to the time on package instructions.

3. Once the oats are cooked, add in golden raisins, cranberries and carrots. Mix well.

4. Enjoy.
