Coconut Matcha Energy Macaroons
1 Tbsp matcha powder
1 ½ cups dried shredded coconut, unsweetened
½ cup coconut oil
3 Tbsp unpasteurized honey
1 tsp vanilla extract
¼ tsp sea salt
Combine matcha powder and dried coconut in a bowl and mix until combined.
Add coconut oil, honey, vanilla, and sea salt and mix until a homogeneous paste is created.
With a teaspoon, scoop out heaped spoonfuls, shape into a ball with clean fingers, and place, separated, on a plate or tray.
Place in plate/tray in fridge or freezer for about an hour or until firm. Consume directly out of the fridge/freezer – these babies will melt if left outside of the fridge for over 20 minutes!
Store in the freezer in an airtight container for several months, although they won’t last that long.
