Crispy Baked Sweet Potato Fries
1 large sweet potato, cut into even ¼ inch thickness sticks
2-3 Tbsp non-gmo cornstarch or potato starch
2-3 Tbsp extra virgin olive oil
Sea salt to taste (to be added AFTER baking)
Preheat the oven to 400 F. Line two large baking sheets with parchment paper. Use two so you don’t have to crowd the sweet potato sticks. This is important! Crowding = soggy sweet potato fries.
Place sweet potato sticks in a large bowl and sprinkle with non-gmo corn starch or potato starch. Toss with clean hands until all sticks have a nice thin coating.
To the same bowl, drizzle olive oil over the sweet potato sticks and toss again until they are evenly coated.
Arrange the sweet potatoes sticks in rows onto the baking sheets. Space them at least ¼ inch apart.
Place trays in a 400 F oven, and bake for 17-20 minutes. Remove from the oven and flip each stick with a pair of tongs. Place back into the oven for 10-15 more minutes, checking periodically to make sure they don’t burn.
Turn the oven off and keep the fries inside as the oven cools down for about 15 minutes. This step will help the fries get even more crispy!
Remove fries from oven, season with sea salt, then enjoy!
