Easy Peasy Seedy Crackers
1 ½ cups pumpkin seeds
1 ½ cups buckwheat flakes (can substitute rolled oats)
1 ½ cup flax seeds
1 ½ tsp sea salt
1 Tbsp honey
3 Tbsp olive or coconut oil
1 ¾ cups hot water
Add all ingredients to a large bowl and stir to combine. Place cover over bowl and let sit overnight on a counter. This is your dough.
In the morning, lay parchment paper over a baking tray (mine is roughly 12” x 18”), making sure entire surface is covered.
Scoop dough onto parchment paper, and with your hands (it is easier if they are slightly wet), press the dough across the parchment-lined tray so that you are left with a more or less even layer of dough that covers the entire tray.
In a 350 F preheated oven, place tray inside to bake. Bake for 25 minutes.
Remove from oven, and with a sharp knife or pizza cutter, cut dough into squares. I usually do 3 rows and 6 columns, making 18 crackers, but you can do smaller or larger sizes if you like.
Flip your crackers (carefully!), then place back in the oven for another 15 to 20 minutes.
When baking time is up, remove from oven and let cool before serving.
