Fall Harvest Salad

This autumn-inspired salad is sweet, delicious, and a great way to get in lots of raw and bitter-less leafy greens. With crisp pome fruits, crunchy sprouts, soft black kale, red leaf lettuce, crunchy pecans and juicy cranberries, this salad is great to share with your friends and family this fall harvest. This recipe is easy to prepare and the perfect way to get your daily value of leafy greens and fruits in!

Ingredients

1/2 bunch black kale
1/2 bunch red leaf lettuce
1 gala apple
1 European pear
1/2 cup red radish sprouts lightly packed
1/2 cup pecans
1/3 cup cranberries sweetened with apple juice

Vinaigrette:

1/2 cup blackberries
1/4 cup avocado oil
3 tbsp apple cider vinegar
1 tbsp date syrup
Pinch of sea salt

Method

1. Start chopping the lettuce and kale and give them a good massage and wash. Add red radish sprouts and leafy greens to a large mixing bowl.
2. Add Cranberries and pecans to the mixing bowl. Mix well.
3. Slice apple and pear to prepare to add over top of the salad.
4. To mix the dressing, first mash-up 1/2 cup of blackberries. Add other listed ingredients into a small mixing bowl and stir in mashed blackberries.
5: Pour dressing over salad and mix or toss well until evenly coated.
6: Add the tossed salad to a serving bowl and top with apple and pear.
