Goji Ginger Marmalade

Ingredients

1 large navel orange

½ cup goji berries

¼ cup ginger root, minced

1 cup filtered water

½ cup honey

1 Tbsp chia seeds

Method

Wash orange with fruit and veggie wash or non-toxic dish soap. Cut orange in quarters. Remove flesh from peel.

Cut flesh into small chunks, and add to a saucepan. Cut peel into very thin slivers, and add to saucepan. Add goji berries, ginger, water, and honey to the saucepan and turn to low heat.

Simmer for 3 hours, stirring every so often, until most of the liquid has evaporated.

Stir in chia seeds, and let sit for 20 minutes. Stir again, then transfer to a jar and store in the fridge.
