Hemp Apple Muffin

Ingredients:

3 cups whole-grain spelt flour

2 cups oat flour

1 1/2 cups hemp seeds

4 tsp baking powder

2 tsp baking soda

1/2 tsp sea salt

2 tsp cinnamon

1?2 tsp ground cardamom

2 cups organic applesauce

1 cup maple syrup

1 1/2 cups rice milk

3 tsp pure vanilla extract

1/2 cup chopped bananas

Method:

Preheat oven to 350°F .

In a large bowl, combine the dry ingredients, sifting in the baking powder and baking soda. Stir through until well combined. In another bowl, combine applesauce, maple syrup, rice milk, and vanilla, and mix together.

Add the wet mixture to the dry mixture, and gently fold until the dry ingredients are incorporated.

Spoon the mixture into a muffin pan lined with cupcake cups.

Bake for 35-40 minutes or until golden brown. Makes about 16 large muffins.
