Ingredients

1 cup natural peanut butter*

1 large organic egg

1 tsp vanilla extract

½ cup coconut sugar crystals

3 Tbsp gelatinized maca powder

½ tsp sea salt

½ tsp baking soda

Method

In a large bowl, whisk together egg and vanilla extract. Add peanut butter and stir until smooth…this might require some muscle!

In another bowl, stir together sugar, maca, salt, and baking soda. Add to peanut butter mixture and stir until everything is combined.

On a parchment paper lined baking tray, place flattened balls of dough (you can shape the dough with your hands) and press down further with the back of a fork. These cookies will not spread very much during baking so shape them according to how you want them to come out.

In a 350 F oven, bake for 8-10 minutes. When they are done, remove the tray from the oven and let the cookies cool before trying to move them. They will be very crumbly when they first come out of the oven but will firm up nicely once cool and will get even more solid if placed in the fridge. Makes 12 cookies.

*The only ingredient in peanut butter should be peanuts! Crunchy or smooth may be used- I used crunchy for texture. Can also be substituted with almond butter or other nut/seed butters.
