Paleo Biscuits with Gelatin
1 ½ cups fine ground almond flour (JK Gourmet is a great brand)
2 Tbsp gelatin powder
½ tsp baking soda
¼ tsp salt
2 organic eggs
5 Tbsp canned coconut milk
1 Tbsp honey or maple syrup
1 tsp lemon juice
In a bowl, combine almond flour, gelatin powder, baking soda, and salt. In another bowl, whisk together eggs, coconut milk, honey, and lemon juice.
Add liquid mixture to dry mixture and whisk until all lumps have disappeared. Should form a loose dough.
Cover a baking sheet in parchment paper. Divide batter roughly into six and dollop portions onto parchment. Because the dough is loose, you may find it easier to shape into a biscuit round directly on the parchment.
In a 350 F oven, bake for 15-17 minutes, or until golden at edges.
In addition to these recipes, you can add gelatin to smoothies, tea, soups, etc, for a nutrition boost. Have fun with it and let us know how it goes!
* Please note that in all recipes, I use the grass-fed beef gelatin powder from Great Lakes Gelatin. Don’t confuse their gelatin powder (which is in a red can) with their collagen hydrolysate powder (which is in a lime green can). The collagen hydrolysate is also a wonderful product with many similar benefits, but does not have the gelling property that gelatin does, which is essential to these recipes.
