Protein Rich Crispy Squares

Ingredients

½ cup date paste

4 cups puffed rice cereal

½ cup almond butter

3 tbs coconut oil

2 tbs raw honey

1 tbs chia seeds

½ teaspoon cinnamon

1 scoop of protein powder (I used a grass fed Vanilla Whey Protein)

Pinch of sea salt

Method

Date paste:

In a blender or food processor add approximately 15 dates (make sure they are pitted). Add 1 tablespoon of water and blend. Add more water little by little if needed to achieve desired consistency. You want a  well blended sticky paste not a liquid.

In a large bowl, add puffed rice cereal and set aside.

In a medium sized pot, slowly heat coconut oil, honey, and almond butter, stirring constantly.

Once ingredients have mixed together, add date paste, cinnamon and salt.

Remove pot from heat and then mix in protein powder and chia seeds and quickly, stir well.

Using a spatula, add mixture to bowl and mix to coat all of the puffed rice evenly.

Transfer mixture to a lightly greased (or lined with parchment paper)  9 inch casserole dish.

Smooth out mixture with a spatula and place in the refrigerator.

Chill for at least 30 minutes, cut into desired shapes, and enjoy!
