Seedy Hemp Crackers
Ingredients
1 cup raw shelled hempseeds
½ cup whole flaxseeds
1 ½ cups rolled oats
4 Tbsp poppy seeds
1 tsp sea salt
2 Tbsp raw honey
3 Tbsp extra virgin olive oil
1 ½ cups filtered water
Method
Add all dry ingredients (various seeds, oats, salt) to a large bowl and stir to combine. Add honey and oil and mix well. Pour water over mixture and stir well, then let sit for 4 hours, or overnight on a counter (just cover the bowl with a tea towel or plate). This is your dough.
After time has elapsed, lay parchment paper over a baking tray, making sure entire surface is covered.
Scoop dough onto parchment paper, and with your hands (it is easier if they are slightly wet), press the dough across the parchment-lined tray so that you are left with a more or less even layer of dough that covers the entire tray.
In a 350 F oven, bake for 25-30 minutes, or until edges have become slightly golden. Once this has happened, remove the tray from the oven and flip the dough. This is easiest if you take two opposing corners on the diagonal of the parchment paper, and flip the dough back on to the tray in one, confident motion. If you’re not feeling confident, cut the dough into four large squares and flip each square, one by one, using a large spatula.
Place flipped crackers back in the oven for another 10 minutes or so, and then remove from the oven.
Allow to cool and cut crackers into desired sizes. Store in an airtight container in the fridge for up to a week. If left in larger squares, these crackers make a great alternative to bread!
