Summer Reds Salad
This deliciously red summer salad captures all of the crisp, fresh and sweet notes that a summer salad should have! Using local organic strawberries, radishes, basil and some other crunchy, textured ingredients, this salad boasts some beautiful hues and flavours. Plus, it’s super quick to prep!
Summer Reds Salad:
1/2 pint organic strawberries, sliced
Small handful basil leaves, julienned
1 bunch radishes, sliced thin
Handful pine nuts
1/3 cucumber, quarter and sliced thin
1 cup broccoli sprouts (or other sprouts)
Juice of 1/2 lime
1/4 cup olive oil
Pinch salt and pepper
Splash of red wine vinegar
1/4 tsp Dijon mustard
1. Mix the dressing together and toss together with the salad ingredients.
