Ingredients
Purple Layer:
½ cup blueberries
3 Tbsp filtered water
2 tsp raw honey
Red Layer:
¼ cup goji berries
¾ cup watermelon, cubed
Green Layer:
Juice and zest of 1 lime
¾ cup canned coconut milk
1 Tbsp honey
1 tsp matcha powder
Method
Starting with the purple layer, put all ingredients into a blender and blend until smooth. Divide mixture evenly into popsicle molds. Place in the freezer for at least an hour.
While purple layer is freezing, prepare the red layer: Put all ingredients into a blender and blend until smooth. Once freezing time for purple layer is up, pour red layer on top, dividing mixture evenly into popsicle molds. Place in the freezer for an hour. Don’t freeze this layer for longer than an hour- you want it to be slightly soft when you pour on the last layer and put the popsicle sticks in.
-While the red layer is freezing, prepare the green layer: Put all ingredients into a blender and blend until smooth. Once the hour is up for setting the red layer, pour the green layer on top, dividing the mixture evenly into popsicle molds. Carefully wedge the popsicle stick in. Place in the freezer for 2-3 hours to set.
When removing popsicles to eat, you can run the mold until warm water for a few moments to ease the removal. Then, enjoy under the hot sun!
