Ingredients

Juice and zest of 1 lime

1 Tbsp raw honey

1 Tbsp toasted sesame seed oil

1 tsp sea salt

2 tsp ginger root, finely minced

1 yellow pepper, diced into small pieces

½ an English cucumber, diced into small pieces

¾ cup purple cabbage, diced into small pieces

¾ cup mint leaves, finely sliced

¼ cup goji berries

Method

In a large bowl, make the dressing (you will be adding the ingredients to this same bowl later): Add lime juice and zest, honey, oil, salt, and ginger, and whisk with a fork until well combined.

Add the rest of the prepared ingredients to the bowl, toss, and serve. Great topped with toasted nuts and seeds!
